Aubergine Wraps

Great as a starter or a finger food for picnics or canapés.

Egg plant (aubergine) 1
Garlic 2 cloves
Parsley 50 g
Coriander 50 g
Olive oil 50 g
Salt, black pepper, ground coriander to taste


  • Fine dice garlic. Pick the parsley and coriander;

  • Cut the egg plant into slices;

  • Heat olive oil in the frying pan. Fry the aubergine till soft, about 2-3 min each side:

  • Then each slice of cooked aubergines season with salt and pepper, and put on it a bit of a garlic, parsley and coriander. Then make a roll:

  • Put on the plate and serve cold:

PS: you can add crumbled feta cheese for the wraps.
