Sharlotka. Russian Apple Sponge

Plain flour 3/4 cup
Caster sugar 3/4 cup
Eggs 3
Apples (depends on size) 2-4
Bread crumbs 1/2 cup
Cinnamon 1 tsp
More sugar for apples 2 tbsp
Butter (for greasing) 1 tbsp

Preparation method

  • Preheat the oven to 180C/355F/Gas 4;

  • Mix together breadcrumbs, sugar and cinnamon:

  • Slice the apples:

  • Mix sliced apples and mixture of breadcrumbs, sugar and cinnamon;

  • Grease and flour a deep baking dish and arrange all the apple slices to cover the bottom of the dish.

  • Place the caster sugar and eggs into a bowl and whisk together;

  • Add flour into a bowl and whisk together to make a thick smooth batter;

  • Spoon the batter mixture over the top:

  • Transfer to the oven to bake for 30-40 minutes. (To check if the sponge is ready, insert a skewer into the top of the sponge, if it comes out sticky, return to the oven to cook for another 5 minutes.)

Serving suggestion: serve sprinkled with icing sugar or use custard cream or double cream.
