Fried Fish

 

Serves: 1 filet (200-250 g) per person

Fish (here: cod) 2 filets
Flour 50 g
Salt 1 tsp
Vegetable oil 50 g

Sauce Ingredients:

Egg yolk 1
Olive oil 50 g
Lemon juice 2 tbsp
Chopped dill 1 tbsp

Cut each filet in half. Prepare a dip by mixing the flour with salt. Dip each piece of filet in the flour.

Heat the vegetable oil in a frying pan, add the fish and fry on medium heat about 3-4 minutes on each side:

While the fish is frying, make the sauce (it takes about 1-2 minutes to make):
  1. Whisk the egg yolk with a pinch of salt;
  2. Add the olive oil, a few drops at a time, continuing to beat vigorously all the while until the liquid seems to thicken and lighten a bit and looks like an emulsion;
  3. Add lemon juice and chopped dill and mix together.
When the fish is cooked, place it on a plate and pour the sauce over the fish. Serve with potato chips and salad:
