Cold Horse-Radish Sauce

 
Egg-yolks 6
Sugar 3 tsp
Olive oil 2 tbsp
Lemon 1
Grated horse-radish 6 tbsp
Dill, parsley 2 tbsp
Salt 1/2 tsp
 

Stir the egg-yolks with the sugar, gradually trickle, stirring, 2 table-spoons of olive oil and the juice from 1 lemon into it. Add 6 table-spoons of grated horse-radish, salt, chopped dill, and parsley. Mix well and let it congeal in the cold.
