Egg Sauce

 
Eggs 7
Egg-yolks 7
Sugar 300 g
Grape juice 500 g
Lemon 1
 

Boil the lemon and remove the peel. Stir the eggs and egg-yolks with the sugar, pour in the grape juice, add the lemon peel, and boil on low heat beating the mass with a mixer. Serve when the sauce is three times as much in volume and turns into light spume. Otherwise, ten minutes later the spume will sag and become watery.
