Dried Nettle Soup

Dried Nettle Soup


Water or stock 1 l
Dry nettle leaves 30 g
Onion chopped 1
Potato diced 2-3
Butter 50-75 g
Bay leaf 1
Salt, pepper to taste
Hard boiled egg 4
Spring onion, chopped to taste


  • Heat the butter in a large saucepan over a medium heat;

  • Add the onion and cook for 10 min. until golden;

  • Add the water or stock:

  • Add diced potato and bay leaf;

  • Cook for 10 min until the potato is half cooked;

  • Add dry nettle:

  • Cook for a further 10-15 min until the potato is soft;

  • Season to taste and remove bay leaf:

  • Serve the soup with hard boiled egg cut in half and chopped spring onion. Also you can add sour cream for extra flavour:

PS: For this recipe you can use fresh nettle leaves, about 100 g. Add them at the end of cooking and cook for 1 minutes, then serve.
