Ingredients

Water or stock 1 l
Nettle leaves 300 g
Leek chopped 1
Potato diced 2-3
Butter 50-75 g
Salt, pepper to taste
 
 

Instruction

  • Nettle washed and leaves picked:

  • Heat the butter in a large saucepan over a medium heat;

  • Add the leek and cook for 10 min. until start to soften

  • Add the water or stock:

  • Add diced potato;

  • And cook for 20-25 min until the potato is soft.

  • Add the nettle leaves, simmer for 1 min to wilt

  • Then blend the soup;

  • Season to taste

  • Serve the soup with double cream or with dead nettle flowers, if you have them:
