Wash the spinach leaves well, add them to the
saucepan and cook gently for 5 min. until the leaves are soft. Then
add hot water, season with vinegar, salt, and black ground pepper,
bring to a boil and cook for further 5 min.:
Spoon the soup into a food processor and
process to a fine purée.
Serve the soup garnished with some cream,
sour cream or a hard-boiled egg:
